Ingredients (Serves 2)

  • 4 large free-range eggs (ideally from your backyard chooks)
  • 2 thick slices of sourdough bread
  • 1 ripe avocado
  • 1 medium tomato, sliced
  • A handful of baby spinach or rocket
  • Olive oil or butter (for frying)
  • Sea salt and cracked black pepper
  • Optional: Feta cheese, chilli flakes, fresh herbs (parsley, chives, basil)

Method

  1. Toast the Sourdough: Brush sourdough slices lightly with olive oil or butter and toast until golden. Set aside.
  2. Fry the Eggs: In a medium pan over moderate heat, add oil or butter and gently fry the eggs until cooked to your liking. Season well.
  3. Prepare the Toppings: Mash the avocado with a pinch of sea salt and (optionally) a squeeze of lemon. Lay fresh tomato slices and greens over the toast. Spread avocado on top.
  4. Assemble the Breakfast: Top each sourdough slice with the fried eggs. Add crumbled feta, herbs or chilli flakes for an extra layer of flavour.
