At Dine-A-Chook, we believe in starting the day with honest food. This rustic breakfast celebrates the freshest ingredients: eggs from your backyard hens, crisp sourdough, and real seasonal flavour.
Whether you’re preparing a quick meal before work or sitting down to a weekend brunch, this dish is a nourishing tribute to the joys of backyard living.
Ingredients (Serves 2)
- 4 large free-range eggs (ideally from your backyard chooks)
- 2 thick slices of sourdough bread
- 1 ripe avocado
- 1 medium tomato, sliced
- A handful of baby spinach or rocket
- Olive oil or butter (for frying)
- Sea salt and cracked black pepper
- Optional: Feta cheese, chilli flakes, fresh herbs (parsley, chives, basil)
Method
- Toast the Sourdough: Brush sourdough slices lightly with olive oil or butter and toast until golden. Set aside.
- Fry the Eggs: In a medium pan over moderate heat, add oil or butter and gently fry the eggs until cooked to your liking. Season well.
- Prepare the Toppings: Mash the avocado with a pinch of sea salt and (optionally) a squeeze of lemon. Lay fresh tomato slices and greens over the toast. Spread avocado on top.
- Assemble the Breakfast: Top each sourdough slice with the fried eggs. Add crumbled feta, herbs or chilli flakes for an extra layer of flavour.
